Pineapple Upside Down Cupcakes for Mom
It has come to my attention that some people don't like chocolate. WTH!?
Don't like chocolate? Well. There you have it. Proof that there are aliens living among us.
Well, even aliens have mothers, so here's a none chocolate Mother's Day treat.
Nothing is as refreshing as pineapple, except maybe a can of Fresca.
I don't have a cake pan, but I do have muffin tins, so lets go individual servings of Pineapple Upside Down Cupcakes.
Now, if you don't have chocolate, then butter is just as good. So lets start by spooning in some melted butter into each cupcake tin.
Add in a spoonful of brown sugar to each tin. Butter and Brown Sugar. Stewardess, I might need a towel. Pop in a Maraschino Cherry.
Well, now is the time to add the chopped pineapple.
Here's the part I like best. The cake. The recipe calls for a pre-made mix. I love those.
Add cake mix, eggs, oil, and pineapple juice. Mix the cake and pour it into the cupcake tins.
Bake at 350 degrees for 20 minutes.
Cool, flip, enjoy.
