I don't get cheese. Never have. To me, it's lazy. It's like selling a blank canvas at a art show. When creating a pizza, it's like a work of art.

I was raised in a pizza shop. When you pull out a pizza from a hot oven you can tell if

You have no wiggle room

someone cared when they made it. Are the ingredients spread out evenly? Are there air bubbles? There shouldn't be. Is there cheese on the crust? Again, unless you ordered it, there shouldn't be.

Cheese pizza is the hardest to make. You have no wiggle room. If you make a pepperoni pizza and you get an air bubble, you slap a new piece of pepperoni on top of it after you pop the bubble. Straight cheese pizza needs to be looked after carefully.

I might be able to get behind a cheese pizza if you add more than one cheese. If you hand me a slice of mozzarella cheese pizza, I'll say "No thanks". But if the mozzarella is mixed with cheddar, I'd be tempted. And if you add a little colby-jack, then, yes, I'm accepting a slice of cheese pizza.
