Pancake Recipe From Weight Watchers
Yesterday I saw a plea on the Facebook for any recipes using PB2. I love PB2, and have experimented with it a lot. Here is my pancake recipe that utilizes it.
For those of you who don't know PB2 is a powdered peanut butter. You just add water and you get the amazing taste of peanut butter without all the fat. A serving is only 1 point. They have plain peanut butter and, my favorite, chocolate peanut butter.
I like to add a 1/4 cup of oatmeal to it, making the total 3 points. I use this as a topping for the pancakes. You can also go Elvis and add a banana.
The pancakes themselves are only 1 point. I make big pancakes and can still get two per serving. I've made them thin, which I believe Frenchists call crepes, but I find crepes to be creepy. The key is to use the Weight Watcher Smoothie pack. Mix in a half cup egg whites, stir, and fry.
So, to add up the points,
PB2 with oatmeal - 3 points
Weight Watcher Smoothie Pack - 1 point
1/4 cup egg whites - 2 points
Total for a filling chocolate breakfast treat - 6 points
